About the Role

Pirata Group is seeking a talented Executive Chef to lead our Italian cuisine restaurants. You'll oversee kitchen operations, ensure top-notch food quality, and drive menu innovation for our expanding Italian concepts. 

Duties & Responsibilities

• Ensure compliance with all restaurant policies, procedures, standards, specifications, guidelines, and training programs in a timely manner.
• Monitor, direct, and teach food hygiene standards, kitchen safety procedures, and Back of House operations.
• Train all restaurant staff in food knowledge and technical skills, continuously striving to develop them in all areas.
• Oversee the recruitment of the Back of House team, optimizing kitchen productivity, and ensuring all departmental duties are met within company targets.
• Set and maintain high standards of food quality, ensuring consistency in flavor, presentation, portioning, seasoning, and timing of all food items served. Personally check every dish and give each plate the “final touch.”
• Create new dishes and contribute to menu development.

• Extensive experience in Italian cuisine and the ability to execute authentic Italian dishes
• Multi-unit kitchen management experience
• A proven background in training and teaching in the kitchen
• An in-depth understanding of food purchasing and costing software
• Production kitchen experience
• Excellent communication and interpersonal skills
• Able to meet deadlines effectively and efficiently.
• Fluency in English is a must

About the Role

We are now looking for a dependable Sous Chef to join Pici Causeway Bay, our pasta hideaway in HK’s busiest retail and commercial district

You will be working in a fast-paced kitchen, supporting the Head Chef as the second in command in kitchen operations. You will ensure that your section is ready for service and that you prepare the dishes promptly to the expected standards. You will also take ownership of back-of-house duties such as stock take and staff training.
